Egg Fried Rice

Ingredients
4+ Green / spring onions
Garlic, Ginger, Chili 1/2 tsp of each
1 pack Bacon
1-2 cups mixed frozen veg (bean, carrot, corn)
4 TBS Soya sauce
2 TBS Oyster sauce
3 Eggs
Cooked Rice 4 cups + (cold or cooled down or next day leftover from fridge)
Salt
Pepper
More soya sauce and sambal oelek or chili sauce to serve
Method
Microwave (or fry) bacon. Chop into small blocks.
Microwave (or steam) veg.
Finely chop onion, separate green and white.
Heat pan, scramble 2 eggs and remove when just about done. Beat the remaining egg with a fork in a bowl and set aside.
In hot oil fry the garlic ginger and chili for a min or two.
Add white parts of onion. Add bacon.
When bacon and onion cooked, add the scrambled egg and veg.
Add cold rice, separate, spread, now add mixed egg and stir into all the rice while letting it fry.
Stir in the bacon and veg. Fry for a little while till rice browns a bit.
Halfway through add your Soya sauce and Oyster sauce and stir in.
After cooking stir in the green parts of the onion.
Serve with more Soya sauce and chili sauce eg sambal oelek. Try not to eat too much.
